Best horse archer: Both khuzait and aserai horse archers are good but the best horse archers are the khuzait khans guard which are noble units. Best infantry: aserai have decent shock infantry with the palace guard but from my experience most people go with imperial legionaries as their front line due to their strong armour and shield.

I stick with breweries but I use a mod that removes the limit on how many workshops you can have so I put one down in each core city my faction controls and it's decent income. Silversmith in Sanala and Ortysia makes between 300-500 denars depending on their prosperity.
Workshops can be profitable depending on the prosperity of the city and the villages around it. Make sure you only build in cities with high prosperity, and base your workshop type off of what inputs you get from the villages. For example, a city with high prosperity and 2 or 3 grain-producing villages is going to have very successful breweries.

An "easier" way to get some more troops is getting trading high enough (125 iirc) and then take the workshop perk. at least with 1.72 its easy to have some profitable workshops, so you get like 3-4 renown everyday for free. that helps you to rank up and grab the +15 men per rank.
